Paella is the combination of Roman and Arabic culture and that includes a major influence on the food and recipes of both the ethnicities. The Arab conquerors were the first to introduce rice in Valencia. The word “paella” is supposed to have stemmed from the Arabic word, “baqula” that means leftovers. There are various variations of the Paella food depending on where you are living and what is available to you. Here we are going to provide the recipe of seafood paella in particular which is a very popular and wholesome dish indeed. This is a Mediterranean cuisine that serves four people.

- Lobster tails from four small lobsters (6-12oz each)
- Olive oil- 3 Table spoon
- 1 large yellow onion- chopped
- Spanish rice or short gained rice soaked in water for 15minutes- 2 cups
- Garlic cloves-4, chopped
- 2 large pinches of Spanish saffron threads that are soaked in ½ cup water
- 1 tsp paprika
- 1 tsp cayenne pepper
- ½ tea spoon pepper flakes
- Salt to taste
- Large Roma lettuce- 2 large, finely chopped
- French green beans- 6 oz
- Large shrimps- 1 lb peeled and deveined
- Fresh chopped parsley- ¼ cup
Bring 3 cups of water to boil till the water starts rolling in a large pot. Add the tails of the lobster and then boil the water further for a very little time until the lobster tails turn pink. With a pair of tongs remove the tails and do not discard the water used for cooking the lobster. Once it has cooled down, remove the shell and cut it into large chunks. Take a large pan or skillet and heat 3 table spoon of olive oil in it. Add the onions and cook for 2 minutes and then add the rice and cook for another 3 minutes. Add the garlic and lobster cooking water after this. Stir in the saffron and the water for soaking it, cayenne pepper, paprika, Aleppo pepper and salt. Add tomatoes and beans. Cook in low heat for 20 minutes and let the water get reduced.
Uncover and push the shrimps on the rice and spread it evenly. Cover and cook for another 10-15 minutes. Finally at the lobster chunks and garnish with parsley. Serve the paella hot.
